From there you could add or subtract sidings for work etc. When you generate a new activity you will get all the same basic settings. Yes, that's right. So David, just save your settings first, then generate an activity, and if you don't like it, load the saved settings first and then change one or two things.
I've also found it can really help to have a map of the route handy when generating activities, so that you don't need to cross over to the other track, or work facing-point switches where there's no runaround nearby, etc.
